Koko Bay pulls off a particular Dubai magic trick: it feels more like Seminyak than Palm Jumeirah, despite sitting directly across the water from one of the most recognisable skylines on earth. The design language is thoughtful rather than cosplay — natural woods, undyed linen, macrame swings hung from the terrace, crocheted lampshades, aqua-tiled bars, and banks of emerald greenery that visibly thickens by the year. Walk in at 5pm and the golden hour light hitting the Bali-style thatch somehow transports you thousands of kilometres east.

The physical set-up is beach-forward rather than pool-forward. Around 90 sunbeds line up on imported white sand, deep double daybeds sit under tropical thatched roofs at the back, and a raft of cabanas run across the upper deck each with a small plunge pool — more spa than swim. The restaurant spills out across two levels: a buzzy ground-floor bar and dining area, and an upper terrace that catches the westerly sunset directly over Dubai Marina. The kitchen is what distinguishes Koko Bay from other Palm West venues. The wine list is small but intelligent; the cocktail programme runs Asian-ingredient forward with lemongrass, kaffir lime, yuzu, and Southeast-Asian spirits.

Koko Bay runs across a full day-into-night arc. Mornings are quiet and family-friendly — a swim, a coffee, a shared breakfast plate. Afternoons build the bar trade. Koko Bay is one of a small group of Dubai beach clubs where the food is genuinely a reason to book rather than an afterthought. The menu leans Japanese, Chinese and Southeast-Asian in roughly equal measure, tied together by a pan-Asian fusion philosophy and European presentation touches — think sashimi tostadas, dim sum with European sauces, nasi goreng plated like a risotto.

The crowd-pleaser is the Lava Prawns — crispy tempura prawns glazed in a chilli-sweet Asian jam that has launched a thousand Dubai Instagram reels. Robata kushiyaki skewers come off an open charcoal grill: black cod, Wagyu, chicken tsukune, asparagus wrapped in bacon. Dim sum runs the classic range plus a few signatures — truffle shumai, crystal shrimp dumplings, black pepper beef buns. The nasi goreng is the quiet hero: smoky, egg-crowned, served with prawn cracker tuiles.

Drinks match the kitchen. Cocktails use lemongrass, kaffir lime, yuzu, jasmine, Thai basil. Sake and shochu are well-represented. The wine list is tight but works hard with food — rieslings and grüner veltliners for the spicier dishes, rosé by the bottle for the beach. Non-alcoholic cocktails are as complex as the alcoholic ones, a subtle signal that the bar team takes the whole programme seriously.
