Fluid's kitchen is firmly in the beach-club-plus tradition — not a formal restaurant, not a snack bar, but a deliberately curated poolside menu built for long afternoons in the sun. The emphasis is on shareability, freshness, and the kind of food that works just as well at 2pm as it does as a sunset nibble after a swim.
Expect tuna tartare, burrata with heirloom tomato and basil oil, truffle fries, crispy baby squid, grilled-chicken Caesar with anchovy dressing, wagyu sliders, a properly dressed Mediterranean pizza, and a range of sushi and sashimi plates that lean Nikkei (Japanese-Peruvian) in their flavour work. Ceviches rotate through the week. The watermelon-and-feta salad is a quiet star that guests order repeatedly.
The bar is where Fluid leans into its sunset identity. The signature Fluid Spritz (Aperol, grapefruit, cava) is the most-ordered drink on the menu. Frozen cocktails — margaritas, daiquiris, piña coladas — are done with real fruit and proper dilution, not the slushy-machine horror you'll find at lesser Palm venues. A short but smart wine list leans Provence rosé and Italian whites. Shisha is available at the pool edge from late afternoon.
